

The selection of the Hong Kong pastry team was held from 6th to 8th July, during one of the world most important event dedicated to chocolate, Le salon Du Chocolat. Pastry chefs coming from Hong Kong and other Asian countries have been competing to show their skills in building chocolate sculptures, during the selection event organized by the well-known pastry chef Jeffery Koo and by Barbara Castiglione, international referent of FIPGC and member of the FIPGC International Pastry Team of Excellence. The sculptures presented at the competition were related to the theme of the next FIPGC World Championship and depicted history, mythology and traditions of Hong Kong and Asian tradition. The best three pastry chefs have been selected to represent Hong Kong, coached by Jeffery Koo, who already was coaching the national team in the previous edition of FIPGC Pastry World Championship.
